I TRIED MAKING SOME THUMBPRINT COOKIES AFTER EATING SOME AT A PARTY. AFTER READING SOME DIFFERENT RECIPES I DECIDED TO TRY MY HAND AT COMING UP WITH A SUITABLE RECIPE TO MAKE SOME FOR MY GREAT NIECE USING HER FAVORITE CANDY AND MINE...'JUNIOR MINTS'. I THOUGHT MY RECIPE WAS WELL WORTH SUBMITTING SO HERE IT IS...HOPE YOU LIKE IT!

Ingredients

  • COOKIE INGREDIENTS:
  • 1 stick (1/2 c.) butter or margarine, softened & unsalted
  • 2/3 cup sugar
  • 1 large egg yolk
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup flour, unsifted
  • 1/3 cup hershey's cocoa
  • 1/2 cup chopped pecans (optional)
  • - granulated sugar
  • 1 box 'junior mint' candies

How To Make my best...'jr.mint' thumbprint cookies

  • Step 1
    Cream butter, sugar, egg yolk, milk and vanilla.
  • Step 2
    Combine flour, salt & cocoa; blend into creamed mixture.
  • Step 3
    Stir in finely chopped pecans.
  • Step 4
    Chill dough about an hour or until firm enough to handle. Roll dough into 1-inch balls. Roll in sugar.
  • Step 5
    Place on lightly greased cookie sheet. Press thumb gently into center of each cookie.
  • Step 6
    Bake at 350 degrees for 10 to 12 minutes, or until set. As soon as removed from oven, place a Junior Mint into 'thumbprint' Cool slightly before removing from cookie sheet. Cool completely before storing.
