When my friends came over after school, the first place they headed was my Mum's cookie jar. This recipe comes out perfect every time :)

I experiment by adding craisins or other small pieces of dried fruit, but I still like the original chocolate chip version the best!

Ingredients

  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1/2 c
    tenderflake lard (substitutes do not work the same)
  • 1/2 c
    butter
  • 1/2 tsp
    cinnamon
  • 3/4 c
    brown sugar, firmly packed
  • 3/4 c
    white sugar
  • 2 large
    eggs, beaten
  • 1 Tbsp
    hot water
  • 1 tsp
    vanilla extract
  • 1 c
    chocolate chips
  • 2 c
    rolled oats

How to Make Mum's Tendercrips Cookies

Step-by-Step

  1. Pre-heat oven to 350F Sift flour, baking soda and salt together in a container.
  2. Using a WOODEN spoon, in a large bowl, cream lard and butter together. Add sugars gradually, mixing together.
  3. Mix in eggs, water and vanilla.
  4. Gradually blend in dry ingredients. Add oats and chocolate chips last. Mix together well, but DO NOT beat to a pulp.
  5. Drop spoonfuls of batter onto greased cookie sheet. Bake at 350°F for 10 - 12 minutes.
  6. Let cookies sit on pan for a minute then remove from pan and allow to cool before you put these in a container.
