This recipe was a favorite of my Grandmother. We looked forward to her making these cookies as they just melted in your mouth.

Ingredients

  • 1 c
    white sugar
  • 1 c
    brown sugar, firmly packed
  • 1 c
    butter or shortening
  • 2
    eggs
  • 1 c
    milk
  • 2 c
    flour
  • 3 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 Tbsp
    vanilla extract

How to Make Mrs. Andersons Filled Cookies

Step-by-Step

  1. Cream together white sugar,brown sugar and shortening or butter. Add eggs and mix well. Stir in 1 cup milk.
  2. Sift together flour, baking powder, soda and salt and add to the creamed mixture.
  3. Add vanilla extract and enough more flour to make a soft dough
    Refrigerate overnight.
    Roll out dough in portions to cut out circles with cookie cutter. Fill with Raisin filling. Top with another dough circle.
    Bake at 375 degrees 8-10 minutes
  4. Raisin filling
    1lb raisins,1/2 c water, 1/2 cup white sugar,tsp vanilla and 1 tbls flour. Bring to boil and cool.
