mount shastas
These cookie make me think of the famous mountain (Mount Shasta) north of Redding, California. The original recipe called for 1 cup chopped walnuts. They're enjoyable with tea!

- 1/2 cup shortening
- 1 teaspoon vanilla extract
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 12 egg yolk
- 1 1/2 cups sifted flour
- 3/4 teaspo salt
- 3 TBS milk
- 1 egg white
- 1/2 cup sugar
- 1 cup flaked coconut
How To Make mount shastas

Step 1Cream the shortening with vanilla extract; add the two sugars, beating until fluffy. Add thhe egg yolk, and beat thoroughly.

Step 2In another mixing bowl, blend flour and salt. Add to creamed mixture, alternately with milk, mixing until blended, after each addition.

Step 3Drop by rounded teaspoonfuls onto ungreased cookie sheets; gently flatten slightly. Set aside.

Step 4Beat egg white until frothy. Add 1/2 cup sugar gradually beating until stiff peaks form.

Step 5Top each cookie with a teaspoon of the coconut meringue, you just made, shaping it into a peak.

Step 6Bake at 375 degrees Fahrenheit for 10-12 minutes. Recipe makes 48 cookies!
