Ingredients
- 1 cup granulated sugar
- 1 cup powdered sugar
- 1 cup butter, softened
- 2 large eggs
- 1 cup olive oil
- 2 teaspoons vanilla extract (or other flavor if desired)
- 5 cups all purpose flour (not self-rising)
- 1 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon baking soda

Step 1Cream sugars and butter in large mixing bowl until light and fluffy Add eggs one at a time continuing to cream Blend in oil and vanilla with wooden spoon

Step 2Sift all dry ingredients together Add dry ingredients to butter and cream mixture gradually while mixing well with wooden spoon

Step 3Preheat oven to 350º Line cookie sheet with parchment paper Roll dough into 1-2" balls, place on cookie sheet far enough apart so they won't touch each other then flatten with bottom of glass Cook in 350º oven for 10 minutes or until slightly brown on edges.
