Crunch up Little Debbie bars with rolling pin--I did it with them still in the packages. Melt 4 tablespoons (half a stick) butter. Mix with the Little Debbie crumbs, then make a crust.
2Cover with 1/2 coconut (more if you like!) Break chocolate bar into equal pieces where it's scored. Distribute evenly on crust. Chocolate chips would also work--the bars were on sale at the 99 cent store!)
Bake about 8-10 minutes.
3Meanwhile, beat 2 tbls. butter and brown sugar. Beat in egg and vanilla. Add flour mixed with baking powder and salt.
4Spread mixture over crust and top with 1/2 cup coconut, or more. Bake about 20 minutes.
