moonbeam cookies
I found this recipe when I was looking for a treat for a gathering at my church. They were a big hit! Some of the kids even beg me to bring them each time I come back! Really easy to make!

Ingredients
- 1 - roll pillsbury sugar cookie dough
- 1 cup flaked coconut (optional)
- 1/2 cup lemon curd or lemon pie filling
- 1/2 cup vanilla baking chips
How To Make moonbeam cookies

Step 1Heat oven to 350°

Step 2In a large bowl, combine cookie dough and coconut. Knead together.

Step 3Shape dough into 1 inch balls. With spoon, make an slight indention in the center of each cookie. Spoon the lemon curd into each indentation.

Step 4Bake 10-13 minutes or until edges are golden brown. Let cool 1 minute and transfer to cooling rack.

Step 5In a small microwavable bowl, melt baking chips. Drizzle over cookies in a zig-zag pattern.

Step 6TIP : Pour melted chips in a small Ziploc baggie and cut the corner to make drizzling less messy.
