I found this cute recipe on lilluna.com and just knew I had to make them for my husband to take to work for Halloween! These are easy, tasty and oh-so-cute!! I absolutely love Halloween!

Ingredients

  • 1 box yellow cake mix
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla
  • 8 ounces cream cheese (i used neufchatel)
  • 1 large egg
  • 7 - drops green food coloring
  • 2 - drops yellow food coloring
  • - powdered sugar
  • - candy eyes

How To Make monster eye cookies

  • Step 1
    Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.
  • Step 2
    In a mixing bowl, beat butter, vanilla, cream cheese, and egg until well blended and fluffy. Add food coloring. Blend. Stir in cake mix until well blended.
  • Step 3
    Roll into 1 inch balls (I used my cookie scooper) and roll in powdered sugar before placing on prepared cookie sheet. (I liked them better when I flattened the dough lightly with my palm otherwise the cookies were really poofy and round instead of flat.)
  • Step 4
    Bake in preheated oven for about 10 minutes. remove from oven and immediately lightly press a candy eye into center. Allow to cool completely before removing from pan.
  • Step 5
    Enjoy with your favorite "ghoul" ;)
