My mom used to make these every year for Thanksgiving, and by days end my older sister and I would have finished them off!

Ingredients

  • 1 c
    persimmon pulp (mixed with 1 tsp. baking soda)
  • 1 c
    granulated sugar
  • 1 c
    chopped walnuts
  • 1 c
    raisins or cranraisins
  • 2 c
    all-purpose flour
  • 1
    egg
  • 1/2 c
    vegetable shortening
  • 1 tsp
    cinnamon, ground
  • 1 tsp
    nutmeg
  • 1 tsp
    allspice, ground
  • 1 tsp
    salt

How to Make Persimmon Cookies

Step-by-Step

  1. Combine ALL ingredients, and mix well.
  2. Drop by table spoon onto lightly greased cookie sheet.
  3. Bake at 325 for 12-15 minutes. Cookies should be firm, but not crunchy and soft but not gooey.
