My mom used to make these every year for Thanksgiving, and by days end my older sister and I would have finished them off! I LOVE THESE!!!

Ingredients
- 1 cup persimmon pulp (mixed with 1 tsp. baking soda)
- 1 cup granulated sugar
- 1 cup chopped walnuts
- 1 cup raisins or cranraisins
- 2 cups all-purpose flour
- 1 - egg
- 1/2 cup vegetable shortening
- 1 teaspoon cinnamon, ground
- 1 teaspoon nutmeg
- 1 teaspoon allspice, ground
- 1 teaspoon salt
How To Make persimmon cookies

Step 1Combine ALL ingredients, and mix well.

Step 2Drop by table spoon onto lightly greased cookie sheet.

Step 3Bake at 325 for 12-15 minutes. Cookies should be firm, but not crunchy and soft but not gooey.
