My mom used to make these every year for Thanksgiving, and by days end my older sister and I would have finished them off! I LOVE THESE!!!

Ingredients

  • 1 cup persimmon pulp (mixed with 1 tsp. baking soda)
  • 1 cup granulated sugar
  • 1 cup chopped walnuts
  • 1 cup raisins or cranraisins
  • 2 cups all-purpose flour
  • 1 - egg
  • 1/2 cup vegetable shortening
  • 1 teaspoon cinnamon, ground
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice, ground
  • 1 teaspoon salt

How To Make persimmon cookies

  • Step 1
    Combine ALL ingredients, and mix well.
  • Step 2
    Drop by table spoon onto lightly greased cookie sheet.
  • Step 3
    Bake at 325 for 12-15 minutes. Cookies should be firm, but not crunchy and soft but not gooey.
