This cookie recipe was given to me by my husband's wonderful mom-mom, who I loved like my very own. She was the best baker I had ever known. Every Sunday when she visited us she would always have a sweet treat for us. This was one of my families favorites, my husband does not like coconut but enjoys it in these cookies, they are soo yummy and chewy, I hope you enjoy as much as we do.

Ingredients

  • 1 stick butter, softened
  • 2/3 cup sugar
  • 1/3 cup packed brown sugar
  • 1 - egg
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/2 cup flaked coconut
  • 1 teaspoon baking powder
  • 2 cups corn flakes

How To Make mommom's corn flake cookies

  • Step 1
    Preheat oven to 350. Lightly grease cookie sheet. Beat butter and sugars until creamy, beat in egg and vanilla. Combine cereal, flour, coconut and baking powder and add to butter mixture - mix well - drop by level tablespoon. Bake 10 - 12 minutes or until golden brown on bottom.
