mocha walnut cookies

This recipe is from the book Perfect Chocolates. I made these cookies last Christmas and they were such a hit that I want to share them with my new friends of Just A Pinch. Please let me know how you like them. This recipe doesn't make a bunch of cookies, so if you want to double the recipe, that is perfectly fine. They turn out just as good.

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup light brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffe granuals, dissolved in 1 tbs. of hot water
  • 1 large egg
  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/3 cup milk
  • 6 ounces semi sweet chocolate chips
  • 1/2 cup walnuts, coarsley chopped

How To Make mocha walnut cookies

  • Step 1
    Place the butter, brown sugar and granulated sugar in a large mixing bowl and beat together thoroughly until light and fluffy. Place the vanilla extract, coffee, and egg in a separate bowl and whisk together.
  • Step 2
    Gradually add the coffee mixture to the butter and sugar, beating until fluffy. Sift the flour, cocoa, baking powder and baking soda into the cookie batter and fold in carefully. Fold in the chocolate chips and walnuts.
  • Step 3
    Place teaspoonfuls for the cookie batter onto 2 greased cookie sheets, allowing room for the cookies to spread. Bake in a preheated oven at 350 degrees for 10-15 minutes, or until crisp on the outside but still soft inside. Let cool on the cookie sheet for a couple of minutes, then transfer to wire racks and let cool completely.
