mocha truffle gems

These little gems are mmmm good! They are like brownie bites...moist, chocolatey goodness! Very easy to make and bake. I mix this dough in a medium saucepan. No mixer, beaters or bowls. Hope you enjoy making them as much as eating them!

Ingredients

  • 1 stick butter
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon instant coffee powder
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • 1/3 cup cocoa, unsweetened
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips

How To Make mocha truffle gems

  • Step 1
    In a medium sized heavy sauce pan over medium heat melt butter and 1/2 cup chocolate chips. Stir in coffee powder/crystals. Cool 5 minutes. Stir in sugars, eggs and vanilla.
  • Step 2
    Combine flour, cocoa, baking powder and salt. Stir into chocolate/coffee mixture. Add 1 cup chocolate chips and stir until just mixed in.
  • Step 3
    Shape into balls about the size of a pecan and place on a lightly greased cookie sheet. Bake in a preheated oven at 350 degrees for 10 minutes. Do NOT bake longer. Cool on cookie sheet 1 minute. Move to wire rack.
  • Step 4
    I always rotate my cookie sheets half way through the baking time. Switch baking rack AND turn the cookie sheet.
