mocha rocky road oatmeal cookies

This is my momma's recipe. These cookies are so unusual and everyone loves them including me. Mom used to take them and share at the nursing home she volunteered at. She makes them around the holidays.

Ingredients
- 1 cup butter
- 1/4 cup brown sugar
- 1/2 cup sugar
- 2 - eggs
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon instant coffee granules
- 1 tablespoon hot water
- 1 3/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/4 cups quick cooking oats
- 1 1/2 cups chocolate chips
- 1 1/2 cups chopped recans
- 1 1/2 cups miniature marshmallows

Step 1Heat oven to 350F.

Step 2Beat butter,sugars until creamy. Add vanilla; beat well. Dissolve coffee granule in hot water. Add to butter mixture; mix well. Add flour, baking soda & salt. Stir in oats, chocolate chips & chopped pecans. Scoop 1 teaspoon of dough and flatten it on on baking sheet. Place 4 marshmallows in the middle and wrap dough around them. Bale for 10-12 minutes.
