Don't know the reason for this odd name on this cookie, but for whatever reason they are as special as that name! I got this recipe years ago from a hostess on QVC! It is a delicious cookie, and they disappear quickly!

    shortening
  • 2 c
    brown sugar
  • 1 tsp
    baking soda
  • 2 Tbsp
    warm water
  • 3 large
    eggs, well baten
  • 1 c
    coconut
  • 1 c
    dry oatmeal
  • 1 c
    dates, chopped
  • 1/2 c
    chopped pecans or walnuts
  • 2-1/2 c
    flour

How to Make Minnesota Mail Carrier Cookies

Step-by-Step

  1. Preheat oven to 400 degrees.
  2. Dissolve the baking soda in warm water, and then combine with all the ingredients.
  3. Drop by teaspoonfuls onto parchment lined baking sheets. Bake about 10 minutes, or until golden brown.
