mini chocolate fruitcakes
These mini cakes are one of my very most favorite Christmas cookie treats!! I have had this cherished recipe for over 20 years and I try to make them every Christmas. They are very easy to make and don't contain all the dried fruit of a real fruitcake (only golden raisins, nuts, dried apricots, and candied red cherries). This is truly a special recipe to me and I hope you try it and enjoy it as I do!

Ingredients
- 1/2 cup all purpose flour
- 2 tablespoons cocoa powder, (heaping)
- 1/8 teaspoon baking powder
- 1/2 cup sugar
- 1/4 cup butter, room temperature
- 1 - egg
- 1/2 teaspoon vanilla extract
- 3 tablespoons milk
- 1/3 cup candied red cherries, chopped
- 1/2 cup chopped nuts
- 1/4 cup golden raisins
- 1/4 cup dried apricots , chopped
- - glace cherrie halves for decoration (red or green)
How To Make mini chocolate fruitcakes

Step 1Line 24 mini muffin tins with fluted foil or paper baking cups.

Step 2Mix flour, cocoa, and baking powder and set aside.

Step 3Beat butter and sugar with mixer until well blended. Beat in egg and vanilla. Add flour mixture and milk and blend until just combined.

Step 4Stir in remaining cherries, raisins, nuts, and apricots. Fill mini muffin pans. Top each with a glace cherry half.

Step 5Bake for 15-20 minutes at 325 degrees until tops look dry.
