These mini cakes are one of my very most favorite Christmas cookie treats!! I have had this cherished recipe for over 20 years and I try to make them every Christmas. They are very easy to make and don't contain all the dried fruit of a real fruitcake (only golden raisins, nuts, dried apricots, and candied red cherries). This is truly a special recipe to me and I hope you try it and enjoy it as I do!

Ingredients

  • 1/2 c
    all purpose flour
  • 2 Tbsp
    cocoa powder, (heaping)
  • 1/8 tsp
    baking powder
  • 1/2 c
    sugar
  • 1/4 c
    butter, room temperature
  • 1
    egg
  • 1/2 tsp
    vanilla extract
  • 3 Tbsp
    milk
  • 1/3 c
    candied red cherries, chopped
  • 1/2 c
    chopped nuts
  • 1/4 c
    golden raisins
  • 1/4 c
    dried apricots , chopped
  • ·
    glace cherrie halves for decoration (red or green)

How to Make Mini Chocolate Fruitcakes

Step-by-Step

  1. Line 24 mini muffin tins with fluted foil or paper baking cups.
  2. Mix flour, cocoa, and baking powder and set aside.
  3. Beat butter and sugar with mixer until well blended.
    Beat in egg and vanilla.
    Add flour mixture and milk and blend until just combined.
  4. Stir in remaining cherries, raisins, nuts, and apricots.
    Fill mini muffin pans.
    Top each with a glace cherry half.
  5. Bake for 15-20 minutes at 325 degrees until tops look dry.
