These mini cakes are one of my very most favorite Christmas cookie treats!! I have had this cherished recipe for over 20 years and I try to make them every Christmas. They are very easy to make and don't contain all the dried fruit of a real fruitcake (only golden raisins, nuts, dried apricots, and candied red cherries). This is truly a special recipe to me and I hope you try it and enjoy it as I do!

Ingredients

1/2 c
all purpose flour
2 Tbsp
cocoa powder, (heaping)
1/8 tsp
baking powder
1/2 c
sugar
1/4 c
butter, room temperature
1
egg
1/2 tsp
vanilla extract
3 Tbsp
milk
1/3 c
candied red cherries, chopped
1/2 c
chopped nuts
1/4 c
golden raisins
1/4 c
dried apricots , chopped
glace cherrie halves for decoration (red or green)

How to Make Mini Chocolate Fruitcakes

Step-by-Step

  • 1Line 24 mini muffin tins with fluted foil or paper baking cups.
  • 2Mix flour, cocoa, and baking powder and set aside.
  • 3Beat butter and sugar with mixer until well blended.
    Beat in egg and vanilla.
    Add flour mixture and milk and blend until just combined.
  • 4Stir in remaining cherries, raisins, nuts, and apricots.
    Fill mini muffin pans.
    Top each with a glace cherry half.
  • 5Bake for 15-20 minutes at 325 degrees until tops look dry.
