These mini cakes are one of my very most favorite Christmas cookie treats!! I have had this cherished recipe for over 20 years and I try to make them every Christmas. They are very easy to make and don't contain all the dried fruit of a real fruitcake (only golden raisins, nuts, dried apricots, and candied red cherries). This is truly a special recipe to me and I hope you try it and enjoy it as I do!

Ingredients

  • 1/2 cup all purpose flour
  • 2 tablespoons cocoa powder, (heaping)
  • 1/8 teaspoon baking powder
  • 1/2 cup sugar
  • 1/4 cup butter, room temperature
  • 1 - egg
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1/3 cup candied red cherries, chopped
  • 1/2 cup chopped nuts
  • 1/4 cup golden raisins
  • 1/4 cup dried apricots , chopped
  • - glace cherrie halves for decoration (red or green)

How To Make mini chocolate fruitcakes

  • Step 1
    Line 24 mini muffin tins with fluted foil or paper baking cups.
  • Step 2
    Mix flour, cocoa, and baking powder and set aside.
  • Step 3
    Beat butter and sugar with mixer until well blended. Beat in egg and vanilla. Add flour mixture and milk and blend until just combined.
  • Step 4
    Stir in remaining cherries, raisins, nuts, and apricots. Fill mini muffin pans. Top each with a glace cherry half.
  • Step 5
    Bake for 15-20 minutes at 325 degrees until tops look dry.
