These are so easy and you can't stop at one, my favorite are blueberry. Enjoy!

1 - box vanilla wafers
2 - 8oz. cream cheese
2 - large eggs
1/2 cup sugar
- fruit pie filling ( blueberry,cherry,pineapple)

How To Make mini cheesecakes

Step 1

Mix cream cheese, eggs and sugar until smooth. Place 1 vanilla cookie(flat side down)in paper liner in mini cupcake pan. Place 1tsp. cream cheese filling on top each cookie. Bake in preheated oven 350 degrees for 15 minutes then cool completely. Place 1 tsp. pie filling of choice onto top of cookies.
