mimi's favorite ranger cookies
Another recipe that is found all over the web. This is just the way I make them. My son doesn't like coconut so I told him all the ingredients, except for the coconut. He ate several cookies before he found out about the coconut. Now he calls these the "Cookies of Deception" LOL. I wasn't into coconut myself, not until I had these cookies. I am very fond of it now. This makes a lot of cookies, but they don't last very long around here.

Ingredients
- 1 cup sugar
- 1 cup brown sugar, packed
- 1 cup butter, softened
- 2 large eggs, beaten
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups oatmeal
- 1 cup coconut, sweetened
- 2 cups crisped rice cereal
- 1 cup chopped pecans (optional but really good in the cookies)

Step 1Preheat oven to 350. Cream sugar, brown sugar, butter and vanilla. Add eggs 1 at a time, mixing well between each.

Step 2Combine flour, soda, baking powder and salt. Stir into sugar, butter and egg mixture. Then, by hand, stir in oatmeal, coconut, rice cereal and pecans.

Step 3Drop by tablespoonsful onto greased cookie sheets and bake for 10 minutes. Remove and let set a minute then remove to wire rack to cool. Repeat until all dough is cooked. I usually re-spray the cookie sheet between batches. The dough can get really sticky.
