Mimi's Favorite Ranger Cookies

Karla Harkins

Another recipe that is found all over the web. This is just the way I make them. My son doesn't like coconut so I told him all the ingredients, except for the coconut. He ate several cookies before he found out about the coconut. Now he calls these the "Cookies of Deception" LOL. I wasn't into coconut myself, not until I had these cookies. I am very fond of it now. This makes a lot of cookies, but they don't last very long around here.

How to Make Mimi's Favorite Ranger Cookies

  • 1Preheat oven to 350. Cream sugar, brown sugar, butter and vanilla. Add eggs 1 at a time, mixing well between each.
  • 2Combine flour, soda, baking powder and salt. Stir into sugar, butter and egg mixture. Then, by hand, stir in oatmeal, coconut, rice cereal and pecans.
  • 3Drop by tablespoonsful onto greased cookie sheets and bake for 10 minutes. Remove and let set a minute then remove to wire rack to cool. Repeat until all dough is cooked. I usually re-spray the cookie sheet between batches. The dough can get really sticky.
