Another recipe that is found all over the web. This is just the way I make them. My son doesn't like coconut so I told him all the ingredients, except for the coconut. He ate several cookies before he found out about the coconut. Now he calls these the "Cookies of Deception" LOL. I wasn't into coconut myself, not until I had these cookies. I am very fond of it now. This makes a lot of cookies, but they don't last very long around here.

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1 cup butter, softened
  • 2 large eggs, beaten
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups oatmeal
  • 1 cup coconut, sweetened
  • 2 cups crisped rice cereal
  • 1 cup chopped pecans (optional but really good in the cookies)

  • Step 1
    Preheat oven to 350. Cream sugar, brown sugar, butter and vanilla. Add eggs 1 at a time, mixing well between each.
  • Step 2
    Combine flour, soda, baking powder and salt. Stir into sugar, butter and egg mixture. Then, by hand, stir in oatmeal, coconut, rice cereal and pecans.
  • Step 3
    Drop by tablespoonsful onto greased cookie sheets and bake for 10 minutes. Remove and let set a minute then remove to wire rack to cool. Repeat until all dough is cooked. I usually re-spray the cookie sheet between batches. The dough can get really sticky.
