I love to make biscotti!!! this is a good one. found the recipe in a flyer in the paper a few years ago. I usually put them both on one pan instead of two.

Ingredients

  • BISCOTTI

  • 3
    eggs
  • 1 c
    sugar
  • 1/2 c
    vegetable oil
  • 1 Tbsp
    almond or orange extract
  • 3 c
    flour
  • 1/4 c
    cocoa powder
  • 1 1/4 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    chopped walnuts or almonds
  • ICING

  • 1 1/2 c
    powdered sugar
  • 1/4 tsp
    almond or orange extract
  • 1 Tbsp
    or so of milk

How to Make Midnight Biscotti

Step-by-Step

  1. Preheat oven 350 degrees. grease 2 baking sheets or ust a silpat.
    combine eggs, sugar, oil and almond or orange extract. Beat well with a mixer on med. speed. In another bowl wisk together the flour, cocoa, baking powder and salt. Add to egg mixture, Beat at low speed until combined. Increase speed to med. and mix until well blended. Stir in nuts. If real sticky add alittle flour to shape dough easily.
  2. Shape dough int two 12-by-2 inch rolls and place on pans. Bake 30 minutes, cool slightly. slice diagonally int 3/4 inch thick slices.
    Reduce oven tem. to 200 degrees. stand biscotti on edge on baking sheets and return to oven. Bake 30 minutes or until dry. Remove to wire racks to cool.
  3. To prepare icing. combine all ingredients. mix well. Drizzle on top of cooled biscotti.
