midnight biscotti
I love to make biscotti!!! this is a good one. found the recipe in a flyer in the paper a few years ago. I usually put them both on one pan instead of two.

Ingredients
- BISCOTTI
- 3 - eggs
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 tablespoon almond or orange extract
- 3 cups flour
- 1/4 cup cocoa powder
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or almonds
- ICING
- 1 1/2 cups powdered sugar
- 1/4 teaspoon almond or orange extract
- 1 tablespoon or so of milk
How To Make midnight biscotti

Step 1Preheat oven 350 degrees. grease 2 baking sheets or ust a silpat. combine eggs, sugar, oil and almond or orange extract. Beat well with a mixer on med. speed. In another bowl wisk together the flour, cocoa, baking powder and salt. Add to egg mixture, Beat at low speed until combined. Increase speed to med. and mix until well blended. Stir in nuts. If real sticky add alittle flour to shape dough easily.

Step 2Shape dough int two 12-by-2 inch rolls and place on pans. Bake 30 minutes, cool slightly. slice diagonally int 3/4 inch thick slices. Reduce oven tem. to 200 degrees. stand biscotti on edge on baking sheets and return to oven. Bake 30 minutes or until dry. Remove to wire racks to cool.

Step 3To prepare icing. combine all ingredients. mix well. Drizzle on top of cooled biscotti.
