I've been making these for years. They are very rich and so yummy with a cup of coffee.

Ingredients
- 1 pound butter
- 1 cup sugar
- 1 teaspoon vanilla
- 5 cups cake flour
- 1 1/2 - pecans, chopped fine
How To Make mexican wedding cookies

Step 1Cream butter and sugar together. Add vanilla.

Step 2Gradually stir in the cake flour.

Step 3Stir in pecans.

Step 4Dough will be stiff!

Step 5Form in size of walnuts and shape like a fat half moon.

Step 6Place on ungreased cookie sheet and bake in 250 degree oven for 1 hour.

Step 7Remove from cookie sheet and let cool.

Step 8Roll each cookie in Confectioner's sugar.
