My mother made these each year at Christmas. Even people who do not like fruit cake enjoys these cookies. I believed she found this on the back of a brown sugar box over 30 years ago. These cookies remind me of Mom and Christmas!!!

Ingredients

  • 3/4 cup shortening
  • 1 1/2 cups brown sugar, firmly packed
  • 3 - eggs
  • 1 pound candied chopped fruit
  • 1/2 pound chopped pitted dates
  • 3 cups sifted all purpose flour
  • 1 teaspoon soda
  • 3/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice, ground
  • 1/2 cup applesauce, or applebutter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pecans, chopped
  • MERRY FROSTING
  • 1 pound confectioners' sugar
  • 1 tablespoon vanilla extract
  • 3 tablespoons water

How To Make merry cookies

  • Step 1
    Shift together flour, soda, spices, salt in a medium bowl and set aside.
  • Step 2
    Cream shortening, add brown sugar, beat with electric mixer until fluffy. Add eggs one at a time. Beat well after each addition.
  • Step 3
    Add fruit and dates to batter. Add sifted flour, soda, spices, salt into batter alternating with applesauce, add vanilla and pecans.
  • Step 4
    Drop by teaspoon or small/medium cookie scoop onto a lightly greased cookie sheet. I used parchment paper. Bake at 350 degrees for 15 minutes.
  • Step 5
    Cool and frost with Merry Frosting. MERRY FROSTING: In a medium bowl, combine 1 pound powdered sugar, 1 tablespoon vanilla, 1/4 teaspoon salt, and 3 Tablespoon water. Blend well. Additional water may be needed to get desired spreading consistency. Spread thinly over tops of cookies. Additional directions can be added such as small slices of green or red candied cherries. Or the icing can be colored with food coloring.
