These are super easy and tasty. If you can't find vanilla mascarpone, use regular mascarpone and add 1 tsp vanilla.

Ingredients

  • 1 stick butter, softened
  • 1 cup granulated sugar
  • 1 egg yolk
  • 8 ounces vanilla mascarpone
  • 2 3/4 cups all-purpose flour
  • 1 cup chocolate chips
  • 2 tablespoons butter
  • 2 cups pistachio nuts, chopped

How To Make mascarpone cookies

  • Step 1
    In a stand mixer fitted with the paddle attachment, add the butter and sugar and cream until light and fluffy.
  • Step 2
    Add the egg yolk and continue to beat until well incorporated.
  • Step 3
    Add the mascarpone cheese and beat until combined.
  • Step 4
    Add the flour and mix well.
  • Step 5
    Divide the dough into two pieces and roll it in plastic wrap to make two logs. Place in the freezer for 1 hour.
  • Step 6
    Preheat oven to 350 degrees F. Spray two baking sheets with cooking spray. Cut the logs into 1-inch pieces and place on the baking sheets about 2 inches apart.
  • Step 7
    Bake for about 10 minutes. Let cool completely.
  • Step 8
    Melt the chocolate chips with the butter. Chop the pistachios and lay them on a plate.
  • Step 9
    Dip one edge of each cookie in the chocolate, then in the pistachios. Place on parchment paper until the chocolate is hardened.
