These are super easy and tasty. If you can't find vanilla mascarpone, use regular mascarpone and add 1 tsp vanilla.

Ingredients
- 1 stick butter, softened
- 1 cup granulated sugar
- 1 egg yolk
- 8 ounces vanilla mascarpone
- 2 3/4 cups all-purpose flour
- 1 cup chocolate chips
- 2 tablespoons butter
- 2 cups pistachio nuts, chopped
How To Make mascarpone cookies

Step 1In a stand mixer fitted with the paddle attachment, add the butter and sugar and cream until light and fluffy.

Step 2Add the egg yolk and continue to beat until well incorporated.

Step 3Add the mascarpone cheese and beat until combined.

Step 4Add the flour and mix well.

Step 5Divide the dough into two pieces and roll it in plastic wrap to make two logs. Place in the freezer for 1 hour.

Step 6Preheat oven to 350 degrees F. Spray two baking sheets with cooking spray. Cut the logs into 1-inch pieces and place on the baking sheets about 2 inches apart.

Step 7Bake for about 10 minutes. Let cool completely.

Step 8Melt the chocolate chips with the butter. Chop the pistachios and lay them on a plate.

Step 9Dip one edge of each cookie in the chocolate, then in the pistachios. Place on parchment paper until the chocolate is hardened.
