Ingredients

  • 1 c
    butter, softened
  • 1 1/2 c
    sugar
  • 1
    egg
  • 9 oz
    can crushed pineapple with juice
  • 3 1/2 c
    flour
  • 1 tsp
    soda
  • 1/2 tsp
    salt
  • 1/4 tsp
    nutmeg
  • 1/2 c
    chopped nuts (optional)

How to Make Mary Jane's Pineapple Cookies

Step-by-Step

  1. Mix thoroughly the butter, sugar and egg. Stir in pineapple with juice.
  2. Stir in together the flour, soda, salt and nutmeg then add to the wet ingredients.
  3. Chill at least 1 hour. Drop by rounded teaspoonfuls about 2" apart on lightly greased baking sheets. Bake at 350º until when touched lightly with finger no imprint remains, about 8-10 minutes.
