This recipe is from my sister-in-law Debbie's mom - Marie. Marie is a part of our family and an excellent baker. We always look forward to her desserts.

Ingredients

  • 1/2 c
    vegetable oil
  • 3
    eggs
  • 1 c
    sugar
  • 1 Tbsp
    anise extract
  • 3 1/4 c
    all purpose flour
  • 1 Tbsp
    baking powder
  • 3/4 c
    chocolate chips, optional
  • 3/4 c
    almonds, optional

How to Make Marie Loeber's Biscotti

Step-by-Step

  1. Preheat the oven to 375 degrees. Grease cookie sheets or line with parchment paper.
  2. In a medium bowl, beat together the oil, eggs, sugar and anise flavoring until well blended. Combine the flour and baking powder and stir into the egg mixture to form a heavy dough. Divide into two pieces.
  3. Form each piece into a roll as long as your cookie sheet. Place roll onto the prepared cookie sheet and press down to 1/2 inch thickness. Bake for 25-30 minutes until golden brown. Remove from baking sheet to cool on a wire rack.
  4. When it is cool enough to handle, slice each roll crosswise into 1/2 inch slices. Place the slices cut side up back onto the baking sheet. Bake for additional 6-10 minutes on each side. Cookie slices should be lightly toasted.
