mammy's forgotten cookies
One of my favorite times when I was a kid was spending the night with my paternal grandmother, Lorah Nell Green. I called her Mammy. But it was a really good night when we would make Forgotten Cookies and left them in the oven over night! I was always amazed how they would "cook" with the oven off! Now, they are favorites of my grown children!

Ingredients
- 2 - egg whites
- 1 teaspoon vanilla
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/4 cup sugar
How To Make mammy's forgotten cookies

Step 1Preheat oven to 325 degrees

Step 2Beat egg whites and salt until it is foamy. Slowly add the sugar a couple of tablespoons at a time, this is important. Beat after each addition until stiff peaks form.

Step 3Stir in the vanilla and then fold in the chocolate chips.

Step 4Drop by tablespoons on a wax paper lined cookie sheet and place the sheets in the preheated oven.

Step 5After 2 minutes, turn the oven off. Leave the cookies in the oven overnight. In the morning, remove from the cookie sheet and store in airtight containers, lined with paper towels to absorb any moisture.
