Biscotti is great with coffee and for dunking. It can be changed to suit everyone. I like to add a little orange zest or juice instead of rum for a bright flavor. Almonds can be exchanged for the chocolate chips. I like them softer so I don't toast them for 10 minutes, just a few minutes are enough. It's really an open canvas for whatever you can think up. During the holidays we usually go for the traditional ones with anise. Enjoy

Ingredients

  • 6 large eggs, room temperature
  • 1 1/2 cups sugar
  • 1 cup oil
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons rum extract
  • 1 cup chocolate chips, whatever kind you like

How To Make mamma's biscotti from fante's

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Beat eggs and sugar until smooth.
  • Step 3
    Add oil, vanilla and rum
  • Step 4
    In a separate bowl, mix flour, salt and baking powder, then add to the oil mixture and mix together well.
  • Step 5
    Mix in Chocolate chips
  • Step 6
    Pour out mixture onto baking sheet, lined with parchment or greased. Shape into loaf
  • Step 7
    Bake for 20 minutes, remove from oven and slice on an angle into wedges.
  • Step 8
    Turn the wedges on one side and bake another 10 minutes, turn to the opposite side and bake again for 10 minutes, until toasty. If you like a softer biscotti bake for less time.
