- 1 cup flour
- 2 - eggs
- 3/4 cup sugar
- 6 ounces butter
- 1 teaspoon finely grated lemon peel
- 1/3 cup confectioners sugar

Step 1Preheat oven to 350

Step 2Brush Madeleine pan cups with melted butter and dust with flour.

Step 3In a heat proof bowl, combine eggs and sugar. Place bowl over pan of simmering water. Beat until mixture is thick and pale yellow. Remove from heat. Continue to beat until cooled and slightly increased in volume.

Step 4Add flour, 6 oz butter and rind. fold lightly and quickly until ingredients are just combined.

Step 5Spoon into prepared molds. Bake 10-12 minutes. Cool. Dust with confectioners sugar if desired.
