These are easy to make and are really good.

Ingredients

  • 1/2 cup egg whites
  • 1 teaspoon vanilla
  • 8 ounces almond paste, grated
  • 2 cups confectioners' sugar
  • 14 ounces sweetened coconut
  • 1/2 cup semi-sweet chocolate chips

How To Make macaroons

  • Step 1
    Preheat oven to 325. Line cookie sheets with parchment or foil.
  • Step 2
    In a large bowl, beat egg whites and vanilla until firm but not dry. In a second bowl, beat almond paste, sugar and coconut until it is the texture of small crumbs. Gently combine the mixtures.
  • Step 3
    Drop tablespoonfuls of dough one inch apart. Bake for 18 minutes or until lightly browned on bottom and firm to the touch.
  • Step 4
    When cool, melt the chocolate chips and drizzle some chocolate on yhe cookies.
