Ingredients
- 5 x large egg whites
- 1/2 cup + 2 tbsp sugar
- 1 pinch salt
- 10 ounces sweetened coconut, flaked
- 1 teaspoon pure almond extract
- 1 teaspoon pure vanilla extract
- 1 ounce semi-sweet baking chocolate

Step 1In a heavy saucepan combine egg whites, sugar, salt & coconut & cook over medium low heat, stirring frequently until all the ingredients combine together, 12 - 15 minutes.

Step 2The mixture should be sticky & moist, not dry. Remove from heat & stir in the extracts. Set aside on a dish & let it cool in the refrigerator, 30 minutes.

Step 3Preheat oven to 300 degrees F. Using a tbsp, scoop tightly packed tbsp onto a baking sheet covered with a silpat or parchment paper. Bake 27 - 30 minutes or until golden.

Step 4Let them cool then melt the chocolate in the microwave & drizzle on top of the cookies using a spatula or a spoon.
