macaroon meringues

These little Meringues are so good. I got this recipe from my Grandma years ago. These make great holiday cookies.

Ingredients

  • 20 - double soda crackers (40 singles)
  • 1 1/4 teaspoons double acting baking powder
  • 1/4 teaspoon cream of tartar
  • 4 - egg whites ; room temp.
  • 1 1/3 cups sugar
  • 1 teaspoon almond extract
  • 1 package flaked coconut (3.5oz)

How To Make macaroon meringues

  • Step 1
    Crush crackers into fine crumbs ; mix in the double acting baking powder ; stir well and set aside.
  • Step 2
    Place the eggs in a medium bowl and sprinkle the cream of tartar over top the eggs ; Beat the eggs whites until stiff but not dry .
  • Step 3
    Gradually add the sugar and when you have stiff peaks gradually add the almond extract.
  • Step 4
    Fold in the cracker crumbs and then the coconut.
  • Step 5
    Drop by heaping teaspoonfuls onto a greased cookie sheet , 2" apart.
  • Step 6
    Bake @ 375° for 12 minutes or until browned.
  • Step 7
    Cool on the cookie sheet away from drafts , once cooled remove to wire rack until the bottom is dry.
  • Step 8
    Store in an air tight container.
