luxury leftover cookies

I came up with these using whatever I had in the pantry at the time. I was having a bad day and baking is a huge stress reliever for me. My family came up with the name and they ask me to make these again and again and again!

Ingredients
- 1/2 cup packed light brown sugar
- 1/4 cup sugar
- 3/4 cup applesauce, unsweetened
- 1/4 cup water
- 1/4 cup egg substitute
- 1 teaspoon pure vanilla extract
- 2 cups old fashioned oats
- 1 cup quick cooking oats
- 1/2 cup all purpose flour
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup semi-sweet chocolate chips
- 1/2 cup raisins
- 1/2 cup dates, chopped
- 1/2 cup dried cherries, chopped
- 1/2 cup dried blueberries

Step 1Preheat oven to 350 degrees. Lightly spray baking sheets with olive oil spray.

Step 2Beat sugars, applesauce, water, egg substitute, and vanilla until creamy. In a separate bowl, combine oats, flours, baking soda, salt and spices. Add to sugar mixture gradually, mixing well after each addition. Stir in chocolate chips and dried fruits.

Step 3Drop dough by rounded teaspoons (I used kitchen teaspoons rather than measuring teaspoons) onto prepared cookie sheet. Bake for 10 minutes. Let stand on baking sheet for one minute before removing to wire rack to cool completely.
