world !! These cookies are always requested by our school superintendent and are his FAVORITE of all the cookies I
bake !! .. He is retiring soon and I have been asked to make them for his retirement dinner !!

  • 3/4 c
    butter, unsalted
  • 1/2 c
  • 2 large
  • 1 tsp
    vanilla extract
  • 1 tsp
  • 2 tsp
    baking soda
  • 3 c
    all purpose flour
  • 1 c
    chocolate chips, mini
  • 1 c
    brown sugar, lightly packed
  • 1 1/2 c
    white sugar

How to Make Lunch Lady Chocolate Cookies


  1. Cream butter, vanilla, shortening, and brown and white sugars.
  2. Add eggs, one at a time, until well incorporated.
  3. Add dry ingredients and mix well.
  4. Stir in chocolate chips by hand. Dough will be stiff.
  5. Drop dough by rounded tablespoons (or use cookie scoop) onto parchment lined baking sheets.
  6. Bake for 12 minutes at 350 degrees.
