low fat biscotti - chai flavored

This is an extremely low fat cookie and low cal also! It has 1.5 grams total fat and 36 calories per cookie! This can be made in other flavors! I also make a higher fat version using chocolate chips and walnuts.

Ingredients

  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 3 1/2 cups flour
  • 3 teaspoons baking powder
  • 4 large eggs
  • 2/3 cup sugar
  • 4 tablespoons butter, softened
  • 2 tablespoons corn oil
  • 1 teaspoon pure vanilla extract

How To Make low fat biscotti - chai flavored

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a large bowl mix together the first 5 ingredients.
  • Step 3
    In a seperate bowl mix together the next 2 ingredients.
  • Step 4
    Then mix together the last 3 ingredients.
  • Step 5
    Now mix everything together. If the dough is too sticky too handle, add more flour, a little at a time.
  • Step 6
    Use a tablespoon measure (slightly heaping) to scoop out each cookie. Form each cookie into long strips like lady fingers (see photo)
  • Step 7
    Place each on a cookie sheet lined with parchment paper. Bake for about 16 minutes or til bottom of cookie is slightly browned. Do not over bake. This is not a crunchy, hard type of biscotti...thats why I don't double bake them. These are much easier on your teeth, but still great for dunking in coffee!
  • Step 8
    When cooled, store in an air tight container.
