loaded oatmeal cookies

These are my personal favorite cookies. The original recipe is not mine but I have adjusted it over the years to make it my own. It is crisp with lots of flavor.

Ingredients
- 1 cup butter flavored shortening
- 1 cup light brown sugar, firmly packed
- 1/2 cup white sugar
- 2 - large eggs
- 1 1/2 cups unbleached white flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3 cups old fashioned oats
- 1/2 cup goldnen raisins
- 1/2 cup shredded and chopped coconut
- 1/2 cup nuts chopped (your favorite)
- 1 teaspoon vanilla extract
How To Make loaded oatmeal cookies

Step 1Cream shortening, sugar, eggs and vanilla. Sift flour, baking soda,salt and cinnamon together. Add slowly to wet ingredients. Add rolled oats 1/2 cup at a time. add remaining ingredients being careful to mix throughly.

Step 2Divide into 3 equal and form into logs. Wrap in wax paper or plastic wrap and put in freezer at least 4 hours. Cut 12 1/4 inch slices per baking sheet. Bake for 10 - 12 minutes.

Step 3Returning unused portion to freezer until ready for next baking cycle or until needed. May be stored in unbaked in an air tight container up to 2 months.
