linzer sandwich rings
These are great for the holidays. I adore using small Christmas shaped cookie cutters for the center cut out

Ingredients
- 3/4 cup butter or margarine, softened
- 1/4 teaspoon salt
- 2/3 cup packed brown sugar
- 2 - egg yolks
- 1 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon finely shredded lemon peel
- 2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 1 cup ground walnuts
- 1/4 teaspoon ground all spice
- - confectioners sugar
- 1/4 cup seedless raspberry jam
How To Make linzer sandwich rings

Step 1In a mixing bowl, beat the butter with an electric mixer on medium-high speed for 30 seconds. Add the brown sugar, baking powder, lemon peel, cinnamon, allspice and salt. Beat until combined

Step 2Beat in egg yolks and vanilla. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour and ground walnuts with a wooden spoon.

Step 3Divide dough in half. Cover and chill for 1 hour or until dough is easy to handle. On a lightly floured surface, roll each half of dough to a 1/8" thickness.

Step 4Using a cookie cutter, cut out dough. Place 1" apart on ungreased baking sheets. Using a smaller cutter, cut out the centers of half the unbaked cookies. Remove the centers and reroll dough.

Step 5Bake cookies in a preheated oven 375* oen for 7-9 minutes or until edges are firm and bottoms are browned. Remove cookies with a spatula and cool on a rack.

Step 6To assemble cookie sandwiches sift confectioners' sugar over the tops of the cookies with cut outs in centers. Set aside. Spread about 1/2 teaspoon of the jam onto the bottom of each cookie without cutout; top with a cutout cookie, confectioners' sugar side up
