Ingredients
- 2 x large egg whites
- 1 1/2 cups sugar
- 1 tablespoon lime zest
- 1/4 teaspoon Kosher salt
- 14 ounces unsweetened coconut, flaked
How To Make lime-in-the-coconut macaroons

Step 1Place racks in upper & lower thirds of oven; preheat to 325 degrees F. Whisk egg whites & sugar in a large bowl just until frothy. Whisk in lime zest & salt. Add coconut & fold to coat.

Step 2Drop heaping tbsp of coconut mixture onto 2 parchment paper or silpat lined rimmed baking sheets. Bake, rotating pans halfway through from top to bottom & back to front, until golden brown, 18 - 22 minutes. Let cool on baking sheets.

Step 3DO AHEAD: Macaroons can be made 1 day ahead. Store airtight at room temperature.

Step 4NOTE: If you can only find sweetened coconut, reduce the sugar to 2 tbsp.
