These have a light molasses taste and are rolled in cinnamon sugar before baking. A wonderful light not to sweet cookie that is wonderful with coffee or tea as an afternoon pick me up

Ingredients

  • 1 stick butter
  • 1 medium egg
  • 1/3 cup sugar
  • 1/4 cup brown sugar, firmly packed
  • 1 teaspoon baking powder
  • 2 cups flour (if glutin free is your way use spelt -i did)
  • 1 tablespoon dark molasses
  • CINNAMON SUGAR
  • 1/3 cup sugar
  • 2 tablespoons cinnamon

How To Make lightly molasses cookies

  • Step 1
    Heat oven to 350 degrees Mix together egg, white and brown sugars and butter. beat well. add baking powder, molasses and salt. beat together. add flour mixing well.
  • Step 2
    roll into a log and pinch off a 1 inch chunk and roll in cinnamon sugar and put on baking pan. continue until all the dough is gone.
  • Step 3
    bake 10 minutes. allow to cool or serve warm
