These cookies are wafer-thin. They're sold in every little pastry shop in Madrid, and are super delicious served with ice cream or custards.

Ingredients
- 1/2 cup unsalted butter, softened
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla
- 1/4 teaspoon lemon zest
- 2 egg whites
- 3/4 cup flour
- pinch salt
How To Make lenguas de gato (cat's tongue cookies)

Step 1Preheat oven to 350F.

Step 2Cream the butter until light colored and fluffy. Add the sugar, vanilla and zest. Continue beating for 1 minute.

Step 3Add the egg whites and beat until the mixture is very light in texture. Gradually add the flour and salt.

Step 4Scoop the dough into a pastry bag fitted with a 1/4 inch round tip (#11 or #12). Pipe dough onto a greased cookie sheet in 2 1/2 inch lengths. Leave space between cookies, as they will spread while baking.

Step 5Bake for 5 minutes, or until the cookies are very lightly browned on the edges. Watch carefully, as they burn easily. Remove them IMMEDIATELY from the pan and let cool on a rack.
