These little gems are delightful. I got the recipe off the Betty Crocker Lemon Cake mix and since they were very easy and called for so few ingredients, I made them! So glad I did!!! If you like lemon, you will truly enjoy these cookies.

Ingredients

  • 1 - lemon cake mix
  • 1/3 cup oil
  • 2 - eggs

How To Make lemony crisps

  • Step 1
    Mix the cake mix, eggs, and oil until well blended. Roll into 1" balls and place on ungreased cookie sheet. Flatten each ball with the bottom of a glass that has been dipped in sugar. Place 2 inches apart on cookie sheet and bake 5 - 7 minutes or until edges are light golden brown.
  • Step 2
    Once cookies are done, make a glaze with powdered sugar and lemon juice. Drizzle glaze over cookies and then sprinkle with powdered sugar before the glaze dries. ENJOY!
