This was my first recipe I made for my mother before she passed. Making this recipe always reminds me of my mother's smile when she ate this cookie. Perfect for summertime.

Ingredients
- 2 sticks butter, room temperature
- 1/2 cup sugar
- 2 cups all purpose flour
- 1/8 teaspoon salt
- 1 cup strawberries, crushed
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 6 - eggs, room temperature
- 3 cups sugar
- 2 tablespoons lemon zest, grated
- 1 cup lemon juice
- 1 cup all purpose flour
How To Make lemon strawberry bars

Step 1Preheat oven to 350 degrees.

Step 2Crust: Cream butter and sugar in a bowl, add in flour and salt. Mix well.

Step 3Dump the dough onto a well-floured surface and gather into a ball. Flatten dough and press into a 9 x 13 baking dish, building up a 1/2-inch edge on all sides. Chill for 5-10 minutes.

Step 4Bake crust for 15-20 minutes, until lightly browned. Let cool on wire rack.

Step 5Strawberry Filling: Add cornstarch and lemon juice to a small bowl until just combined. In a large saucepan, combine strawberries, sugar, and cornstarch mix.

Step 6Heat and stir until mixture boils and thickens, remove from heat and let cool, then spread evenly on cooled crust.

Step 7Lemon Layer: Whisk eggs, sugar, lemon zest, lemon juice, and flour. Pour over the strawberry mix and bake for 30-35 minutes, until filling is set. Let cool to room temperature.

Step 8Cut into squares and dust with powdered sugar.
