lemon strawberry bars
This was my first recipe I made for my mother before she passed. Making this recipe always reminds me of my mother's smile when she ate this cookie. Perfect for summertime.

Ingredients For lemon strawberry bars

2 stickbutter, room temperature

1/2 csugar

1 cstrawberries, crushed

6eggs, room temperature

2 Tbsplemon zest, grated

How To Make lemon strawberry bars

1Preheat oven to 350 degrees.

2Crust: Cream butter and sugar in a bowl, add in flour and salt. Mix well.

3Dump the dough onto a well-floured surface and gather into a ball. Flatten dough and press into a 9 x 13 baking dish, building up a 1/2-inch edge on all sides. Chill for 5-10 minutes.

4Bake crust for 15-20 minutes, until lightly browned. Let cool on wire rack.

5Strawberry Filling: Add cornstarch and lemon juice to a small bowl until just combined. In a large saucepan, combine strawberries, sugar, and cornstarch mix.

6Heat and stir until mixture boils and thickens, remove from heat and let cool, then spread evenly on cooled crust.

7Lemon Layer: Whisk eggs, sugar, lemon zest, lemon juice, and flour. Pour over the strawberry mix and bake for 30-35 minutes, until filling is set. Let cool to room temperature.

8Cut into squares and dust with powdered sugar.
