This was my first recipe I made for my mother before she passed. Making this recipe always reminds me of my mother's smile when she ate this cookie. Perfect for summertime.

Ingredients

  • 2 sticks butter, room temperature
  • 1/2 cup sugar
  • 2 cups all purpose flour
  • 1/8 teaspoon salt
  • 1 cup strawberries, crushed
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 6 - eggs, room temperature
  • 3 cups sugar
  • 2 tablespoons lemon zest, grated
  • 1 cup lemon juice
  • 1 cup all purpose flour

How To Make lemon strawberry bars

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Crust: Cream butter and sugar in a bowl, add in flour and salt. Mix well.
  • Step 3
    Dump the dough onto a well-floured surface and gather into a ball. Flatten dough and press into a 9 x 13 baking dish, building up a 1/2-inch edge on all sides. Chill for 5-10 minutes.
  • Step 4
    Bake crust for 15-20 minutes, until lightly browned. Let cool on wire rack.

    Strawberry Filling: Add cornstarch and lemon juice to a small bowl until just combined. In a large saucepan, combine strawberries, sugar, and cornstarch mix.
  • Step 6
    Heat and stir until mixture boils and thickens, remove from heat and let cool, then spread evenly on cooled crust.
  • Step 7
    Lemon Layer: Whisk eggs, sugar, lemon zest, lemon juice, and flour. Pour over the strawberry mix and bake for 30-35 minutes, until filling is set. Let cool to room temperature.
  • Step 8
    Cut into squares and dust with powdered sugar.
