Lemon Strawberry Bars

This was my first recipe I made for my mother before she passed. Making this recipe always reminds me of my mother's smile when she ate this cookie.
Perfect for summertime.

  • 2 stick
    butter, room temperature
  • 1/2 c
  • 2 c
    all purpose flour
  • 1/8 tsp
  • 1 c
    strawberries, crushed
  • 1/2 c
  • 1 Tbsp
  • 1 tsp
    lemon juice
  • 6
    eggs, room temperature
  • 3 c
  • 2 Tbsp
    lemon zest, grated
  • 1 c
    lemon juice
  • 1 c
    all purpose flour

How to Make Lemon Strawberry Bars


  1. Preheat oven to 350 degrees.
  2. Crust: Cream butter and sugar in a bowl, add in flour and salt. Mix well.
  3. Dump the dough onto a well-floured surface and gather into a ball. Flatten dough and press into a 9 x 13 baking dish, building up a 1/2-inch edge on all sides. Chill for 5-10 minutes.
  4. Bake crust for 15-20 minutes, until lightly browned. Let cool on wire rack.
  5. Strawberry Filling: Add cornstarch and lemon juice to a small bowl until just combined. In a large saucepan, combine strawberries, sugar, and cornstarch mix.
  6. Heat and stir until mixture boils and thickens, remove from heat and let cool, then spread evenly on cooled crust.
  7. Lemon Layer: Whisk eggs, sugar, lemon zest, lemon juice, and flour. Pour over the strawberry mix and bake for 30-35 minutes, until filling is set. Let cool to room temperature.
  8. Cut into squares and dust with powdered sugar.
