Here is another pressed cookie recipe that my Grandma Rose clipped from the news papers and magazines from 1934 - 1950's and this is one of them recipes dated Dec. 1950

Ingredients

  • 1 c
    vegetable shortening
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar, firmly packed
  • 1
    egg , well beaten
  • 1 tsp
    grated lemon rind
  • 2 Tbsp
    lemon juice
  • 2 1/2 c
    sifted enriched flour
  • 1/4 tsp
    salt
  • 1/4 tsp
    baking soda

How to Make Lemon Pressed Cookies (1950)

Step-by-Step

  1. Cream shortening and the sugars. Add eggs and the lemon rind. Beat until light and fluffy. Add lemon juice, blend thoroughly.
  2. Sift together the dry ingredients and gradually add to the shortening mixture , blend thoroughly.
  3. Fill cookie press. Form dough on unoiled cookie sheet.
    BAKE in a moderate oven 375° for 8-10 minutes. yields: 7 dozen assorted cookies.
