These bars are so good..the lemon in the frosting sets them off... Enjoy!

Ingredients

  • 1 1/2 cups unsifted flour
  • 1/3 cup confectioners' sugar
  • 3/4 cup cold butter
  • 2 cups firmly packed light brown sugar
  • 4 - eggs, beaten
  • 1 cup flaked coconut
  • 1 cup finely chopped pecans
  • 3 tablespoons flour
  • 1/2 teaspoon baking powder
  • LEMON ICING
  • 2 cups confectioners' sugar
  • 3 tablespoons lemon juice from concentrate
  • 2 tablespoons butter, softened

How To Make lemon iced ambrosia bar

  • Step 1
    Assemble ingredients

    Preheat oven to 350 In medium bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press onto bottom of lightly greased 13 x 9 inch baking pan bake 15 minutes.

    Meanwhile, in a large bowl, combine remaining ingredients except icing; mix well.
  • Step 4
    Spread evenly over baked crust; bake 20 to 25 minutes. Cool. Spread with lemon icing; chill. Cut into bars. Store covered in refrigerator.

    Lemon Icing: Combine 2 cups confectioners' sugar, 3 tablespoons of lemon juice concentrate and 2 tablespoons of softened butter or margarine, mix until smooth.. If you like a lot of icing; double the batch. I find that the icing is a bit thick, I like mine thinner, so , I added about a tablespoon of cream.
