unsifted flour
1/3 c
confectioners' sugar
3/4 c
cold butter
2 c
firmly packed light brown sugar
eggs, beaten
1 c
flaked coconut
1 c
finely chopped pecans
3 Tbsp
1/2 tsp
baking powder


2 c
confectioners' sugar
3 Tbsp
lemon juice from concentrate
2 Tbsp
butter, softened

How to Make Lemon Iced Ambrosia Bar


  • 1Assemble ingredients
  • 2Preheat oven to 350

    In medium bowl, combine flour and confectioners' sugar; cut in butter until crumbly.

    Press onto bottom of lightly greased 13 x 9 inch baking pan bake 15 minutes.
  • 3Meanwhile, in a large bowl, combine remaining ingredients except icing; mix well.
  • 4Spread evenly over baked crust; bake 20 to 25 minutes. Cool.

    Spread with lemon icing; chill.

    Cut into bars. Store covered in refrigerator.

  • 6Lemon Icing:

    Combine 2 cups confectioners' sugar, 3 tablespoons of lemon juice concentrate and 2 tablespoons of softened butter or margarine, mix until smooth..

    If you like a lot of icing; double the batch.

    I find that the icing is a bit thick, I like mine thinner, so , I added about a tablespoon of cream.
