Ingredients For lemon iced ambrosia bar

1 1/2 cunsifted flour

1/3 cconfectioners' sugar

3/4 ccold butter

2 cfirmly packed light brown sugar

4eggs, beaten

1 cflaked coconut
-
1 cfinely chopped pecans

3 Tbspflour
-
1/2 tspbaking powder
- LEMON ICING

2 cconfectioners' sugar
-
3 Tbsplemon juice from concentrate

2 Tbspbutter, softened
How To Make lemon iced ambrosia bar

1Assemble ingredients

2Preheat oven to 350 In medium bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press onto bottom of lightly greased 13 x 9 inch baking pan bake 15 minutes.

3Meanwhile, in a large bowl, combine remaining ingredients except icing; mix well.

4Spread evenly over baked crust; bake 20 to 25 minutes. Cool. Spread with lemon icing; chill. Cut into bars. Store covered in refrigerator.

6Lemon Icing: Combine 2 cups confectioners' sugar, 3 tablespoons of lemon juice concentrate and 2 tablespoons of softened butter or margarine, mix until smooth.. If you like a lot of icing; double the batch. I find that the icing is a bit thick, I like mine thinner, so , I added about a tablespoon of cream.
