Ingredients
- 2 cups all purpose or unbleached flour
- 2 cups hungry jack mashed potato flakes
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 1/3 cup finely chopped nuts
- 1 teaspoon baking soda
- 3/4 cup margarine or butter, melted
- 1 teaspoon grated lemon peel
- 2 - eggs
- 1/4 cup sugar
How To Make lemon-go-lightly cookies

Step 1Heat oven to 350. Lightly spoon flour into measuring cup; level off. In large bowl, combine all ingredients except 1/4 cup sugar; blend well. Mixture will be crumbly. Firmly press into 1 inch balls; roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 9 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
