Ingredients For lemon-go-lightly cookies

2 call purpose or unbleached flour

2 chungry jack mashed potato flakes

1 csugar

1 cbrown sugar, firmly packed

1/3 cfinely chopped nuts

1 tspbaking soda

3/4 cmargarine or butter, melted

1 tspgrated lemon peel

2eggs

1/4 csugar
How To Make lemon-go-lightly cookies

1Heat oven to 350. Lightly spoon flour into measuring cup; level off. In large bowl, combine all ingredients except 1/4 cup sugar; blend well. Mixture will be crumbly. Firmly press into 1 inch balls; roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 9 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
