Ingredients

  • 2 cups all purpose or unbleached flour
  • 2 cups hungry jack mashed potato flakes
  • 1 cup sugar
  • 1 cup brown sugar, firmly packed
  • 1/3 cup finely chopped nuts
  • 1 teaspoon baking soda
  • 3/4 cup margarine or butter, melted
  • 1 teaspoon grated lemon peel
  • 2 - eggs
  • 1/4 cup sugar

How To Make lemon-go-lightly cookies

  • Step 1
    Heat oven to 350. Lightly spoon flour into measuring cup; level off. In large bowl, combine all ingredients except 1/4 cup sugar; blend well. Mixture will be crumbly. Firmly press into 1 inch balls; roll in 1/4 cup sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 9 to 12 minutes or until golden brown. Cool 1 minute; remove from cookie sheets.
