Ingredients

  • 1/2 cup confectioners' sugar
  • 1/2 cup sugar
  • 1/3 cup shortening
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1-1/2 cup cake flour plus 1-1/2 teaspoons of baking powder
  • 1 teaspoon fresh lemon zest and 1 of juice
  • FOR THE DUST
  • 1 cup confectioners' sugar
  • 1/2 teaspoon lemonade mix

How To Make lemon dusted cookies

  • Step 1
    Using a mixer,blend the half cup of sugars with the shortening until smooth and fluffy. Add the beaten egg,vanilla and salt. Fold in the cake flour,careful not to over mix or the cookies will be tough.Add the water to bring it all together.
  • Step 2
    roll the dough into even small shaped balls,3/4 inch in size and place on a cookie sheet,one to two inches apart. Bake in a preheated oven set at 325 degrees for 18 minutes.
  • Step 3
    In the meantime,combine the one cup of confectioners sugar and the lemonade mix in a baggie,while the cookies are still warm,add to the bag and shake them to coat well. Enjoy your cookies with a big smile! And a cup of tea!! :)
