If you like lemon flavored cookies, I know you will love these. Our family has been making these cookies for Christmas for many years. They take a little bit longer because they are frosted, but it is well worth the effort. You can make them in advance because they freeze beautifully. After frosting I put them into the freezer to flash freeze until the frosting is set (at least 1/2 hr). Then I put them in tupperware containers with wax paper between each layer of cookies. You can make them a few weeks before Christmas and they will be good for a couple of weeks after. That is, if there are any left!

Makes 36 cookies, approx.
Ingredients
- COOKIE DOUGH - COMBINE:
- 3/4 cup butter, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 large egg yolk
- 1/2 teaspoon lemon extract
- THEN ADD:
- 1-1/2 cup flour, sifted
- 1-1/2 cup coconut, shredded
- FROSTING:
- 1/4 cup butter, softened
- 1/8 teaspoon salt
- 2 cups powdered sugar
- 1-1/2 teaspoon grated lemon rind
- 4 teaspoons lemon juice, fresh

Step 1Mix wet ingredients until combined.

Step 2Then add dry ingredients to wet until thoroughly incorporated.

Step 3Roll cookies into one-teaspoon-sized balls. Flatten with a fork and bake in a moderate oven at 350 degrees for 9 minutes or until the bottom is lightly browned.

Step 4Put cookies on a rack to cool.

Step 5Frost cookies: When cookies have cooled frost top with a moderate amount of frosting. They are ready to be eaten or frozen to be eaten later. Enjoy!
