If you like lemon flavored cookies, I know you will love these. Our family has been making these cookies for Christmas for many years. They take a little bit longer because they are frosted, but it is well worth the effort. You can make them in advance because they freeze beautifully. After frosting I put them into the freezer to flash freeze until the frosting is set (at least 1/2 hr). Then I put them in tupperware containers with wax paper between each layer of cookies. You can make them a few weeks before Christmas and they will be good for a couple of weeks after. That is, if there are any left!

Ingredients

  • COOKIE DOUGH - COMBINE:
  • 3/4 cup butter, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/2 teaspoon lemon extract
  • THEN ADD:
  • 1-1/2 cup flour, sifted
  • 1-1/2 cup coconut, shredded
  • FROSTING:
  • 1/4 cup butter, softened
  • 1/8 teaspoon salt
  • 2 cups powdered sugar
  • 1-1/2 teaspoon grated lemon rind
  • 4 teaspoons lemon juice, fresh

How To Make lemon dainties

  • Step 1
    Mix wet ingredients until combined.
  • Step 2
    Then add dry ingredients to wet until thoroughly incorporated.
  • Step 3
    Roll cookies into one-teaspoon-sized balls. Flatten with a fork and bake in a moderate oven at 350 degrees for 9 minutes or until the bottom is lightly browned.
  • Step 4
    Put cookies on a rack to cool.
  • Step 5
    Frost cookies: When cookies have cooled frost top with a moderate amount of frosting. They are ready to be eaten or frozen to be eaten later. Enjoy!
