Ingredients
- 1 cup butter, softened
- 2 cups sugar
- 1 teaspoon vanilla extract
- 2 - eggs
- 1 teaspoon lemon extract
- 2 teaspoons lemon juice
- 2 teaspoons lemon zest, grated, fresh
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 cups all purpose flour
- 1 cup powdered sugar
- FOR THE FILLING
- 8 ounces cream cheese, softened
- 2 tablespoons lemon juice, fresh
- 1 teaspoon lemon zest, grated
- 3 cups powdered sugar
How To Make lemon cream filled sandwich cookies

Step 1Preheat oven to 375.

Step 2In a mixing bowl, cream together butter, sugar for 3 minutes. Add in vanilla, eggs, extract, juice and zest, beat for 1 minute.

Step 3Next place the remaining ingredients into mixing bowl and blend well. If dough is slightly sticky you may want to add in a 1/4 cup more flour.

Step 4Let dough chill while you mix the filling. For the filling heat the cream cheese until smooth. Add in remaining ingredients and beat well.

Step 5Place filling in covered container, chill for 1 hour. Roll dough into balls and flatten.

Step 6Bake for 9-11 minutes. Cool on a wire rack completely before filling and sandwiching.
