1/2 c
butter, softened
3/4 c
powdered sugar
2 tsp
lemon extract
1 tsp
vanilla extract
2 c
minus 1 tablespoon cake flour
1 Tbsp
1/4 tsp
baking powder
1/4 tsp
4 Tbsp
1 c
additional powdered sugar for dusting

How to Make Lemon Cooler Cookies


  • 1cream butter, powdered sugar, milk, lemon and vanilla
  • 2combine flour, cornstarch, baking powder, and salt add to creamed mixture combine thoroughly.. dough will be firm but slightly sticky
  • 3chill dough for 1 hour or until easily worked with. dough can also be frozen for later use. for a more traditional lemon cooler look shape dough into logs and chill then cut in half length wise then slice 1/4 inch slices. I prefer to roll out the dough and use a cookie cutter.. bake at 350 for 9-12 minutes until sides are set dust with additional powdered sugar
