  • 1/2 c
    butter, softened
  • 3/4 c
    powdered sugar
  • 2 tsp
    lemon extract
  • 1 tsp
    vanilla extract
  • 2 c
    minus 1 tablespoon cake flour
  • 1 Tbsp
    cornstarch
  • 1/4 tsp
    baking powder
  • 1/4 tsp
    salt
  • 4 Tbsp
    milk
  • 1 c
    additional powdered sugar for dusting

How to Make Lemon Cooler Cookies

Step-by-Step

  1. cream butter, powdered sugar, milk, lemon and vanilla
  2. combine flour, cornstarch, baking powder, and salt add to creamed mixture combine thoroughly.. dough will be firm but slightly sticky
  3. chill dough for 1 hour or until easily worked with. dough can also be frozen for later use. for a more traditional lemon cooler look shape dough into logs and chill then cut in half length wise then slice 1/4 inch slices. I prefer to roll out the dough and use a cookie cutter.. bake at 350 for 9-12 minutes until sides are set dust with additional powdered sugar
