lemon cookies with a lemon glaze

Ingredients
- 2 cups sugar
- 2 - eggs
- 1/2 cup lemon juice
- 4 1/2 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1 cup shortening
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 - fresh grated lemon rind
- 1 pound powder sugar
- 2 tablespoons evaporated milk
- 1/4 teaspoon lemon exract
- 2 tablespoons melted butter
- - rind and juice of a lemon
- - drops of boiling water to thin
How To Make lemon cookies with a lemon glaze

Step 1In a bowl cream together shortening and sugar.

Step 2Add egg and beat until fluffy.

Step 3Add lemon juice and grated rind.

Step 4In a separate bowl, sift flour, baking powder and baking soda.

Step 5Add above mixture with egg mixture,alternating with buttermilk.

Step 6Place on greased cookie sheet and press slightly.

Step 7Bake at 350 on a for 12-15 minutes or until slightly golden.

Step 8Remove and let cool completely.

Step 9In a bowl combine lemon juice, lemon rind, melted butter, evaporated milk, lemon extract and powder sugar and mix to form a glaze.

Step 10Spread on cookies.
