These Lemon Cookies are so good, and they're equally good glazed or without the glaze. The recipe produces a soft, chewy cookie with a lemon glaze on top, for an added citrus boost. Baking time assumes all 4 dozen cookies are baked in one batch. If your oven will accommodate only 2 cookie sheets, you might have to bake them in two batches and that will increase the total baking baking time. But each batch will still be about 9-12 minutes.

Ingredients

  • LEMON COOKIES
  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon fresh lemon juice
  • 1 1/2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 1/4 cups all-purpose flour
  • LEMON GLAZE
  • 1 1/2 cups powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon milk
  • 1/4 teaspoon vanilla extract

How To Make lemon cookies

  • Step 1
    Preheat oven to 350°F. Grease cookie sheets (to accommodate 4 dozen cookies); set aside.
  • Step 2
    In a large bowl, cream butter and sugar together. Add egg, and beat well. Add lemon juice, lemon zest and vanilla and mix until well blended. Add salt, baking powder and flour and mix until well incorporated and dough is smooth.
  • Step 3
    Grab pieces of dough and roll into 1-inch balls, and place dough balls on greased cookie sheet about 2 inches apart.
  • Step 4
    Bake in preheated oven (350°F) for 9 to 12 minutes or until lightly golden on the edges of cookies.
  • Step 5
    Combine glaze ingredients in a medium bowl, and whisk until smooth. Drizzle over slightly warmed cookies, and set frosted cookies aside to cool completely.
