These cookies are very lemony and so super easy. If you like a soft chewy cookie, then these are the cookies for you.

Ingredients

  • 1 package lemon cake mix. 18.25 oz size
  • 1/3 cup oil
  • 2 large eggs
  • 1/3 cup powdered sugar
  • 1 teaspoon lemon juice

How To Make lemon cookies

  • Step 1
    Pre-heat the oven to 375 degrees. In a large bowl pour in your cake mix and add the oil, eggs and lemon juice. Mix well, they will be kind of thick. Let them sit for 10 minutes before you make them into cookies this makes them easier to handle.
  • Step 2
    Use a teaspoon and dip out the cookie dough and roll it in the powdered sugar. Place on a cookie sheet and bake for 8 to 10 minutes or until it is just lightly brown on the bottom and chewy in the center.
  • Step 3
    If you don't want to roll them in powdered sugar you can just add a teaspoon of lemon juice and 2 tablespoons of water to the powdered sugar and make a glaze. Spoon over cookies while they are warm. These cookies are not good warm, you need to let them cool before eating.
