lemon coconut bars
I'm always looking to make a new treat for a program that I bake for. How else can I get lots of people to sample my goodies! With lemon being one of the altime favorite flavors, I try to come up with yummy lemon flavored treats. I just made this up this past week, and they got rave reviews. Hope you like them too!

Ingredients
- 1 box lemon cake mix
- 7 tablespoons butter, melted
- 1 - lemons, juiced
- 1 - lemon zest, grated
- 2 large eggs
- 1 bag 12 oz bag vanilla chips (2 cups)
- 1 1/2 cups angel flake coconut
- 3/4 cup sliced almonds
- 1 can sweetened condensed milk (14 ounce can)
- LEMON GLAZE
- 1 - lemon zest, grated
- 1 - lemon juiced
- 1 1/2 cups sifted powdered sugar
How To Make lemon coconut bars

Step 1pre heat oven to 325. Spray 10"x15"x1" deep pan with no stick spray, I use the canola oil spray.

Step 2Combine cake mix, melted butter, eggs, lemon juice and lemon zest in bowl and stir to combine. Press mixture into prepared 10"x15" pan and bake for 12 to 15 minutes in 325 oven. Do not brown it, the top should feel dry when touched. Remove from oven and cool to room temp.

Step 3Once it is cooled, top with vanilla chips, sliced almonds than sprinkle coconut over the top. Now drizzle the sweened condensed milk over the top. Place back in 325 oven and bake 15 to 20 minutes, till golden brown.

Step 4While the final baking is being done, make the glaze. Mix powdered sugar and lemon zest and juice together. Should be thick but runny. Using a pastry brush, spread glaze over the top of the slightly cooled bars. When completely cooled cut into desired sized bars and enjoy!
